A traditional Brazilian cornbread with a rich, moist texture and a hint of sweetness, perfect for sharing with family and friends.

Ingredients

Dough

  • 3 eggs eggs
  • 1.5 cups sugar
  • 1 cup butter ((or margarine))
  • 2 tablespoons erva-doce ((optional))
  • 2 cups finely ground corn flour
  • 3 cups wheat flour
  • 1 tablespoon chemical leavening agent (fermento em pó químico)
  • a pinch salt salt
  • 3 tablespoons milk

For topping

  • crystal sugar crystal sugar for sprinkling

Instructions 

  • Preheat oven to 180°C (356°F). Grease a baking dish with butter.
  • In a bowl, beat eggs and sugar until well combined. Add melted butter and mix.
  • In a separate bowl, mix corn flour, wheat flour, salt, and leavening. Gradually add dry ingredients to wet mixture, stirring gently.
  • Add milk and mix until smooth. Pour batter into prepared baking dish.
  • Sprinkle crystal sugar on top. Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.

Notes

For a richer flavor, let the bread rest for a few minutes before serving.
