A comforting Brazilian chicken and rice soup, perfect for a cozy meal.
Ingredients

Instructions
In a large pot, heat the olive oil and sauté the onion and garlic until fragrant.
Add the chicken pieces and cook until browned.
Pour in the hot water, add bay leaves, salt, and pepper. Bring to a boil.
Add the rice, carrots, and potatoes. Reduce heat and simmer for about 30 minutes or until the chicken is cooked and vegetables are tender.
Remove bay leaves, adjust seasoning, and sprinkle with chopped parsley before serving.
Notes
Use fresh herbs for best flavor and adjust seasoning to taste.
