A comforting Brazilian chicken and rice soup, perfect for a cozy meal.

Ingredients

Protein

  • 500 g chicken drumsticks or chicken breast in pieces
  • 1 cup white rice
  • 1 large carrot, diced
  • 1 medium medium potato, diced
  • 1 medium medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or oil
  • 2 leaves bay leaves
  • 6.3 cups hot water
  • to taste salt and black pepper
  • a handful chopped fresh parsley

Instructions 

  • In a large pot, heat the olive oil and sauté the onion and garlic until fragrant.
  • Add the chicken pieces and cook until browned.
  • Pour in the hot water, add bay leaves, salt, and pepper. Bring to a boil.
  • Add the rice, carrots, and potatoes. Reduce heat and simmer for about 30 minutes or until the chicken is cooked and vegetables are tender.
  • Remove bay leaves, adjust seasoning, and sprinkle with chopped parsley before serving.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
