Ingredients

Massa

  • 45 g sucre glace
  • 15 g poudre de noisette
  • 125 g farine T55
  • 1 g sel
  • 55 g beurre doux
  • 28 g oeuf entier
  • 20 g jaunes d'oeuf
  • 5 g crème liquide entière

Garnitura de Noisettes

  • 180 g noisettes
  • 90 g sucre
  • 2 g fleur de sel
  • 20 g noisettes
  • 151 g crème liquide
  • 21 g miel d'acacia
  • fve de Tonka fava de Tonka (raiz ralada ou em pó)
  • 70 g chocolat Guanaja (ou chocolate amargo 70% cacau)
  • 70 g chocolat au lait Jivara (ou chocolate ao leite 41% cacau)
  • 37 g beurre doux

Instructions 

  • Prepare a shortcrust pastry with the ingredients and blind bake.
  • Make the hazelnut filling by caramelizing the sugar and adding hazelnuts, cream, and salt.
  • Combine chopped chocolates and butter to create the ganache.
  • Assemble the tartlets with the hazelnut filling and chocolate ganache.
  • Chill before serving for best flavor.
