Ingredients

Dough

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1.5 cup low-fat or lactose-free milk
  • 0.5 cup extra virgin olive oil
  • 3 units eggs
  • 1 tbsp baking powder
  • 0.5 tsp salt

Filling

  • 1 large garlic clove, mashed
  • 1 piece cooked and shredded chicken breast
  • 1 small chopped onion
  • 2 dents garlic cloves, mashed
  • 1 can drained green corn
  • 1 large chopped tomato
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped yellow bell pepper
  • 1 tbsp extra virgin olive oil
  • 1 cup light cream cheese

Seasonings

  • to taste oregano, black pepper, salt

Instructions 

  • Modo de preparo
  • Prepare a square baking dish (21x21 cm) with non-stick spray and set aside.
  • In a liquidifier, blend eggs, oil, milk, salt, and baking powder until smooth.
  • Spread the batter evenly over the prepared dish.
  • In a bowl, mix chicken, vegetables, and seasonings. Spread over the batter.
  • Bake in a preheated oven at 180°C (356°F) for about 50 minutes or until golden.
  • Let cool slightly, then serve.

Notes

For a richer flavor, add herbs or cheese to the filling.
