How to Make the Recipe

Now, let’s get our hands a little messy and make this delicious bread!

  1. In a small bowl, combine the warm coconut milk and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the melted butter, egg, vanilla extract, and the frothy yeast mixture.
  3. Mix everything together until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time.
  4. Once the dough is formed, knead it on a floured surface for about 5-7 minutes until it’s smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
  6. After the dough has risen, punch it down and fold in the shredded coconut.
  7. Shape the dough into a loaf and place it in a greased loaf pan. Cover it again and let it rise for another 30 minutes.
  8. Preheat your oven to 350°F (175°C). Bake the bread for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Pro Tips for Making the Recipe

Here are some of my favorite tips to ensure your Pão Doce de Coco Fofinho e Cremoso turns out perfectly every time:

  • Make sure your coconut milk is warm but not hot when activating the yeast.
  • For an extra coconut flavor, you can toast the shredded coconut before adding it to the dough.
  • If you want to add a twist, consider mixing in some chocolate chips or nuts!
  • Don’t rush the rising process; it’s essential for a fluffy texture.

How to Serve

This coconut sweet bread is incredibly versatile! Here are some serving suggestions:

  • Enjoy it warm with a pat of butter.
  • Slice it and serve with your favorite jam or cream cheese.
  • Pair it with a cup of coffee or tea for a delightful afternoon treat.
  • Use it as a base for a delicious French toast breakfast!

Make Ahead and Storage

If you want to prepare this bread ahead of time, you can make the dough and let it rise in the refrigerator overnight. Just remember to bring it back to room temperature before baking. For storage:

  • Keep the bread in an airtight container at room temperature for up to 3 days.
  • For longer storage, slice the bread and freeze it in a freezer-safe bag for up to 3 months.
  • To reheat, simply pop it in the toaster or microwave for a few seconds.

Now that you have this delightful recipe in your arsenal, you can impress your family and friends with your baking skills!
